To make a quesadilla, you will need two tortillas of any size. Any kind will do – flour, corn, or whole wheat.
A cheese quesadilla makes an excellent snack, or even a meal
In a skillet, you have the option of putting olive oil or butter on it before you heat it to soften the tortilla and give it a golden brown color. This step is not required, however. You can just heat the tortilla in the skillet by itself.
Heat the tortilla in the skillet on medium to low heat. Sprinkle it with your choice of cheeses, meats, and/or vegetables. Place the second tortilla on top. Turn the quesadilla over when the cheese starts to melt and the bottom tortilla is warm. This process takes about three minutes per side.
When the quesadilla is thoroughly heated, place it on a serving plate. Then, slice it into fourths, and dip it into salsa, cilantro ranch dressing, sour cream, or any dipping sauce of your choice, Quesadillas may also be assembled as above, but wrapped in foil and heated in the oven.
Suggestions for fillings include cheeses such as Cheddar, Colby, or Monterrey Jack. Meat fillings can include fajita beef, shredded beef, chicken, or pork. Vegetable fillings can include avocado, black beans, corn, guacamole, mushrooms, onions, sautéed peppers, and tomatoes. The combinations are limitless!
